My Top 6 Keto Recipes
Hello lovelies! This past week i have gotten a lot of requests to share a few recipes that i have posted on my IG stories. Since we are starting the new year and i have been a Pinterest addict, i discovered the keto diet. New year, new you.. right? The ketogenic diet is a high-fat, adequate-protein, low-carbohydrate diet that forces the body to burn fats rather than carbohydrates. I have put together 6 of my go to keto recipes for you all.
1. Portabella Pizza
-Preheat Convection Oven to 450.
-Wash and destem the Portobello Mushrooms.
-Place the mushrooms on a foil lined sheet and drizzle with olive oil.
-Sprinkle with seasonings. Layer spinach, organic tomato sauce, mozzarella cheese, turkey pepperonis and another round of seasonings. -Cook in the convection oven until cheese has melted.
2. Parmesan Chicken
-Preheat the oven to 400 F.
-Grease the bottom of the casserole dish with olive oil
-Add chicken breasts to the casserole dish. (Thin out chicken breasts.)
-Sprinkle chicken breasts with salt, pepper and garlic powder.
-Add with a thin layer of organic mayo to add a crisp to the chicken.
-Top with cream cheese. Cream cheese should be cold, right out of the fridge.
-Top with fresh parmesan cheese.
-Bake, uncovered, for about 25-30 minutes, until the chicken is cooked through. The cooking time will depend on the thickness of your chicken breasts.
3. Simple Salad
- Add romain lettuce.
- Top with hard boiled eggs, tomato, avocado, and fresh parmesan cheese.
- I used a yogurt blue cheese dressing.
4. Chicken Salad Lettuce Wraps
I love using my left over chicken breast from recipe number 2 to make this for lunch!
- Dice chicken breast into small pieces or shred.
- Add organic mayo and a little organic dijon mustard.
- Top with mozzarella cheese. (Celery and bacon are optional add ins.)
- Mix well and make sure all of the chicken is coated.
-Salt, pepper, garlic powder to taste.
- Serve on romain lettuce.
6. Breakfast Egg Bites
-Preheat the oven to 350ºF.
- Grease a muffin tin with cooking spray and set aside.
-In a medium bowl, whisk the eggs until smooth.
-Add salt, pepper, milk, cheddar cheese and mix well.
-Optional add ins ham, onions, tomato, spinach.
-Spoon the mixture into the muffin tins and fill about 2/3 of the way.
-Top with shredded cheese.
-Bake for 20 minutes, or until the edges become golden.
7. Zucchini Fries.
-Preheat the oven to 425F.
-Line a baking sheet with foil or parchment paper.
-Cut zucchini lengthwise into quarters and put in a large ziplock bag.
-Pour olive oil over zucchini and add garlic powder, salt, pepper, parmesan cheese. Shake.
-Put the zucchini on the baking sheet in a single layer, skin side down.
-Put the zucchini in the oven on the top rack, and bake for 15- 20 minutes until golden.
-Serve warm. Optionally, you can sprinkle zucchini with an extra 1 tbsp Parmesan cheese right before serving.
